I am astounded at the depth and quality of the answer to my question. 
If I could afford it I would choose the $100 tip.  Even if this were
not the book I was searching for (it probably is), it fits my needs
perfectly.

Dear CZH,  Sorry it took me soooo long to reply.  I was unexpectilly
out of town.  Anyway, thanks's for your hard work.  I can tell a lot
of time and effort went into your answers.  I am still unable to get a
few exact answers but I can't blame that on you.  I already had the
Ethnic Cuisines and another book that I would have sworn had the
answers but didn't.  I am not sure since soooo many are individually
owned that all the answers are even out there, but I did get enough
from you answer to be very satisfied.

Excellent explaination. While the answer was not as clear cut as I had
hoped ("Results have been inconclusive, but . . .")everything was
explained clearly and in a logical sequence. It's very difficult to
get nice yes/no answers in medicine. Tip included as promised for work
on a previous question
