Thanks for getting back so quickly,

I was able to sign up at the Morris Red Cross, they actually had a
class starting on August 9th.

The reason for the 3 stars is that I only wanted places that had
actual classes with dates and times scheduled.  I had to re-research
each one of the places you listed to close the deal.  Plus PA is to
far, and I didn't ask for an online course. But I got what I wanted,

Thanks for pointing out Devali wear. Four stars because though you did
not, strictly speaking, answer my question and I am STILL looking for
those banded collar shirts, I did order the baseball style shirt for
my husband. It is a lightweight beautiful fabric and does not have a
collar. He never wears tshirts and the like so this fills the bill for
some occasions. I even like some of the clothes for myself.

  Thank you so much for your extra help; it really hit the spot!  I
was at that cusp of searching where I needed to ask a different
question, and couldn't put my finger on it -- you caught my vibe. 
saf-t-pockets and the PACC site should be everything I need (the long
journey jacket makes a good base pattern, and I've found a few
recommended clothiers near me).
  I also take extra care before setting out on a trip; many years ago
I bought a similar Travelsmith coat for a long journey, but since then
it has worn thin; replacing it led me to ask this question.
