I can find you a recipe for Galantine of Chicken and a recipe for a
Ricotta stuffing, but I cannot find them together. Do you want me to
post pointers to both recipes, so that you can mix them together
yourself?

One other thing --

Galantine is frequently made with a meat stuffing. Do you want a
Ricotta stuffing that is just cheese, or do you want a
Ricotta-mixed-with-meat stuffing?

use google search to find out how some folks do Gallantine Chicken

then its a matter of combining the two, but like in all form of
cooking you would need to experiment to get the best mix that suits
your personal liking.
