Hi sen45~
A typical menu for a lighter Thanksgiving style lunch might include
the following:
1. Turkey
2. Mashed Potatoes with gravy
3. Cranberry Sauce
4. Green Beans
5. Pumpkin Pie
1. Turkey; according to Butterball's handy calculator (
http://www.butterball.com/main_canvas.jsp?includePage=thanksgiving_primer.html&t=Thanksgiving%20Primer%20Landing%20Page&s0=plan_n_prep&s1=primer
) you will want to buy 60 lbs of turkey. You will need roasting pans
for the turkey, as well as kitchen string to tie up the legs. You'll
want a baster so that you can squirt the pan juices onto the turkey
every once in a while, plus a little melted butter for the same
purpose. It's also a good idea to lightly salt and pepper the turkey
before you roast it. Tips for roasting a turkey can be found at this
website:
http://www.butterball.com/static/pages/popup_roasting_video.html
Around the holidays, Turkey can often be found for between 99 cents
and 1.99 a pound in the chain supermarkets.
2. Mashed Potatoes and Gravy. Here is a recipe for mashed potatoes

If you scroll down past the instructions, you'll see that you can
scale it according to how many people you wish to serve.
Here's a recipe for basic gravy:
http://www.cooks.com/rec/doc/piUfUfUfwfEfwdqfwdqfTfwdrOqOEpOOEOAdrOrpGOUphOAdUOrpqOipOpwd
I would multiply the ingredients by eleven. You may wish to use a
whisk to make the gravy. Potatoes and gravy may run $100 for your
large group.
3. Cranberry sauce. It will be easiest (and most economical) to buy
canned cranberry sauce. A 15 oz can will serve about 90 (at 1 teaspoon
a serving), so buy at least two 15 oz. cans. Sauce should only cost
$2-5, depending upon what brand you buy.
4. Green beans; for how-tos on cooking green beans, go to:
http://www.whatscookingamerica.net/Q-A/GreenBeans.htm I'd plan on
serving about a quarter cup of grean beans per adult, and about half
that for the kids. Green beans may cost $25 - $35, if you buy them
canned. More if they are fresh.
5. Pumpkin Pie; for an excellent pumpkin pie recipe, go here:
http://pie.allrecipes.com/az/LibbysRPmpkinPi.asp You can scale this
recipe by changing the number in the "Scale this Recipe" box, just
below the instructions. You will want whipped cream or "Cool Whip" to
top the pie. One ounce of whipped topping equals about 2 tablespoons.
(An average helping of this topping is between one and two
tablespoons.) Pie and whipped topping may run $100-150.
If you wish to add stuffing to the lunch, you'll want 45 cups or about
120 oz. For ease in preparing this meal for such a large number, I'd
suggest buying a quick stuffing like "Stove Top." For stuffing add
another $40 or $50.
The prices given are only estimates, and will depend upon where you
shop and what brands you choose.
