I live in Los Angeles, and will be going to Las Vegas this weekend.  I
will be betting on football games played Sunday and Monday. 
Unfortunately, I will have to leave before the games are over.  Is
there a way for me to collect any winnings from Los Angeles, without
having to go back to Las Vegas to collect?

According to my good buddies at Harrah's (I worked for them at Lake
Tahoe some 30-odd years ago :), all you have to do is look on the back
of your betting ticket to find the address where you mail a winning
ticket to collect your money.

I verified this information with Caesar's Palace. The very friendly
consultant there told me the same thing, and added that you should
mail the ticket by certified mail so you can get proof of its proper
delivery, and you can expect to receive payment in 4 - 6 weeks.
