Where can I find a list of American companies with operations in Germany?

The American Chamber of Commerce (AmCham) in Germany should have the
information you want.

Among their publications is "U.S. Investments in Germany", which lists
approximately "2000 German subsidiaries of U.S. firms alphabetically,
including company address, management information, and SIC code."

With respect to your broader question, you should be able to find
similar information from the American Chamber of Commerce in other
countries.  Just search on Google for "amcham", along with the
particular country you are interested in.  For some countries, the
AmCham will have a publication like the directory for Germany.  For
other countries, you should be able to contact the AmCham and request
the information or a source for that information.

Here is the basic search for "amcham" on Google; the first page alone
lists the AmCham for several European countries.

 But in this case, I was fortunate enough to know about AmCham
already.  Two years ago, I conducted a job search in Germany, and
