What would be a working definition of Minimalism (the art movement) and what are
some works of art from artists to support that definition?

After researching your question, here is what I have come up with:

"Minimalism is a style of art in which objects are stripped down to
their elemental, geometric form, and presented in an impersonal
manner. It is an Abstract form of art which developed as a reaction
against the subjective elements of Abstract Expressionism."

As the above definition states, it was a movement that developed
against the Abstract Expressionism movement which was centered in New
York City from 1946 to the 1960s. The artist in Abstract Expressionism
expressed himself using form and color, and there were no concrete
objects represented.

Another definition that I found was: "A twentieth century art movement
and style stressing the idea of reducing a work of art to the minimum
number of colors, values, shapes, lines and textures. No attempt is
made to represent or symbolize any other object or experience." (by

I highly recommend the above page if you want some visual images of
what this art looked like. You will find that it focuses on one main
"theme" and uses few colours. There are many works with pictures
available which perfectly fit into this definition.

Minimalism) and if you click on the painting, you can read about the
painter, the painting and how the work of art fits into the Minimalism
movement.
