I am looking to find a video made from a movie by "Cantinflas" the
Mexican actor. I don't remember the title, but he was posing as a
woman, and I was an extra in a scene where he was in a gym or
something, and he got on behind me on the exercise bike.  I never got
to see the movie.  It would have been sometime between 1966 and 1971.

I searched - Cantinflas movie - and found one listing of his more than
80 films here:

So, my best deduction is that the movie you are seeking is "Por mis
pistolas". It does seem to take place in Arizona, at least in part,
though you do not mention where you were at the time of filming. Most
of the pother plots mentioned would seem to exclude "posing as a woman
in a gym".

for video). It can be copied to NTSC by video transfer houses in most

This movie was filmed in Mexico City ---probably at the studio.  I was in Mexico.

The fact the movie was made in Mexico is VERY helpful information.

I revisited my research and concluded that of the 5 movies made by
Cantinflas between 1966 and 1971 as you specified, the only logical
choice becomes El Profe (The Professor) based on subject and place of
production.

After MUCH searching, I found a site claiming to have this for sale:
