The word you're looking for is "crepuscular", which for animals means
active at dusk and/or dawn. (By contrast, "diurnal" means active
during daytime, and "nocturnal" means active during the night.) In
some contexts, "crepuscular" is used to refer to activity at one time
(especially dusk); therefore, one might need to specify that the
activity occurs twice a day. But it appears that for deer,
crepuscular refers to its activity at both times of the day.

Here are two examples of the use of "crepuscular" in reference to
deer. You can try the searches I did on Google (aside from the one on
diurnal habits) to find other instances of "crepuscular" and related
terms.

Hi,

Woodland creatures are not the only animals who exhibit this
behaviour. I have a very good friend who is definitely crepuscular,
tending his garden only at dusk.
