It shouldn't be hard to receive a parcel by Christmas within Canada.
Canada Post guarantees a 2-day delivery using Xpresspost to most
destinations. They also offer Priority Courier for next day delivery.
Canada Post is the one doing the guaranteeing, not the store.
The larger online stores, such as Amazon, offer a wide variety of
products but they are not going to be able to give you the personal
contact that you may need to receive the package in time. There are
many many reputable smaller sites who give excellent customer service.
The larger sites require online ordering, but the smaller sites are
happy to talk to you on the phone and will go out of their way to get
the parcel to you on time without incurring ridiculous shipping costs.

At  http://www.bookfinder.com , type in the interest of one of your
gift recipients (for example, "horses") in the "Keyword" field, and
set the country drop-down menu to "Canada". You will receive a list of
out-of-print books about horses, all being offered by booksellers in
Canada.

At  http://www.tomfolio.com/bookcategories.asp  , you can browse by
category, or, click on the "Bookstores" button and browse just the
Canadian bookstores. All TomFolio booksellers sign a "Code of Ethics"
and they all guarantee their books.
