I am looking for the recipe for a Chicken Duquesne sandwich, an open
faced sliced hot chicken (possibly turkey?) covered with a cheese
(probably cheddar) sauce. It may also contain bacon slices in
addition to the cheese sauce. Tbis sandwich is supposed to have
originated in Pitsburgh, Pennsylvania at the Duquesne Club somewhere
in the 1950s, possibly early 60s, and is somewhat similar to the
Turkey Devonshire sandwich although I don't believe it uses the same
white sauce in the melted cheese covering. If the sandwich is still
served it is likely found only in the Pittsburgh area.

I struck out on the Chicken Duquesne, but I thought you might be
interested in this recipe for the original Turkey Devonshire sandwich:

Thanks for your efforts. I was afraid that this might be a tough one to find.

Hello JJLamb,

I asked the Google Editors to remove my answer this morning as it
wasn't the recipe you were looking for. It seemed only fair to reopen
your question to researchers who may have contacts in the Pittsburgh
area.

I do have an e-mail pending with the Pittsburgh Post-Gazette magazine
section. They've reprinted several recipes from the Duquesne Club --
just not Chicken Duquesne. I'll certainly post if it returns
fruitful, or I guess poultryful in this case. Good luck to you and my
researcher colleagues.

Best wishes,
V
