The "link" command returns a list of pages the Google indexer has
identified as having links to these two sites.
Plug link:www.paintballmayhem.com into Google, and the following pages
appear:
1. http://www.spplatattack.com/print.php?sid=7
2. http://www.smyles.net/frenzy/links.htm
3. http://directory.google.com/Top/Shopping/Sports/Paintball
4. http://dmoz.org/Shopping/Sports/Paintball

--> so you wouldn't expect these pages to show up in a "link" search
for the Gear site.
Likewise, plug link:www.paintballgear.ca into Google, and the
following pages appear:

of 9 links appears as for link:www.paintballmayhem.com .
But if you plug link:paintballgear.ca into Google, no links appear at
all.
Why is that?
In addition to its US site at
://www.google.com (USA)
Google maintains a number of mirror sites for various countries, such
as:
://www.google.fr (France)
://www.google.co.uk (United Kingdom)
://www.google.ca (Canada)
While Google does not like to reveal TOO much about the secrets of its
Search Engine success, we do know that the searching and indexing
algorithms for the different countries' mirror Search Engine sites
have all been tweaked slightly in an effort to provide the most
relevant results for that country.
While the Google indexer creates duplicate entries for links to
http://paintballmayhem.com and
http://www.paintballmayhem.com
by removing the "www" from the link to create the second entry,
it appears that the indexing algorithm has been set up to only index
the main link for sites ending in ".ca", and to not make the
additional effort to index the link to that site by removing the
"www".

My apologies, that is indeed a typo: #1 was supposed to be on the
"Does Not" list, rather than the "Does" list.
Web Search guru and Researcher robertskelton-ga was kind enough to
help me out with the 2nd part of your request:
"Google's backward links tend to be incomplete. The most common theory
that I've read at WebMasterWorld is that the link: command will only
list sites with a PR of 3 or higher."
Bear in mind that the Googlers are quite protective of their secret
Search technology, so much of what we know about how Google works has
been arrived at through trial-and-error investigation by hundreds (or
more likely thousands) of Webmasters and Researchers.
