In addition to the suggestions already offered, here is my answer to
your question.

Many companies do not release any detailed information about customer
sales to any organizations (example: “We do not release any statistics
about our customer sales, traffic patterns, or related site
information to any outside parties.”

Also, cutting boards do not have their own unique SIC code, the code
by which the government classifies industry.  SIC codes get down to
the level of wood products, but include numerous wood products – and
many cutting boards are not made out of wood.   I used the “Business
and Company Resource Center” (InfoTrac database available at many
college and public libraries) and the search for “cutting boards” did
not retrieve any relevant hits.

A search on General BusinessFile (InfoTrac) pulled up some
business-related articles having to do with cutting boards, and I am
not allowed (because of licensing) to mail them to you but you could
contact your local library and ask if they subscribe to this database.
 The search term used was “cutting boards.”  Many of the articles have
to do with safety and bateria, though; they do not give information
about sales.

producing specialized items such as cutting boards can be found at:

In general, the way I get information about retail and wholesale sales
is through the census.

However, the categories there are too broad.  They do not get down to
the level you need.

I have checked the Web using google (www.google.com) with terms such

statistics wholesale sales “cutting boards”
figures retail sales “cutting boards”
and looked at various business and census web sites as I mentioned
above.  It appears to me that the specific information you are seeking
is not available, I’m sorry to say.  Not all statistical information
is compiled or published.

Do you mean who are some of the wholesale or retail sales markets, or
do you mean what is the ammount of sales?  And are we talking about
cutting boards for cooking?

I'm looking for dollar and/or unit sales for cutting boards that are
used in consumers' homes.

...and dont forget to use a cutting board made from timber ,especially
pine, as contrary to many years of opinion such boards  hold almost no
bacteria compared to plastic/synthetic material boards which hold
millions of bacterium.
 Reason is simple of course. Pine contains natural in-built germicides
and other agents designed by nature to protect timber. One main one
has almost the same qualities as the turpentine alchohol type
substance you buy at hardware  store which kills germs just as it
would kill you if you drank it. Hope you know what I mean by
turpentine although you could call it something diferent in your part
of the world. Its like kerosene or metholated spirits. Anyway germs
getting in cut marks  of timber cutting board are killed easily by
such natural agents in timber but same cutting marks in synthetic
board is a safety house for same bacteria
