Thank you for allowing me an opportunity to answer your interesting
question.

The method used to test for flours and breads for traces of potassium
bromate is called “inductively coupled plasma-mass spectrometry (CV of
12%)”, sometimes called “closed-vessel microwave digestion with flow
injection–inductively coupled plasma–mass spectrometry”. This method
replaces two older, less accurate tests called “Gas chromatography (CV
of 18%)” and “Liquid Chromatography with Post-Column Flow Reactor
Detection PVM 2:1999”.

Dear lapatisserie-ga; 

Unfortunately the procedure itself is well beyond my area is expertise
as a researcher and would likley require the knowledge of someone who
has a relatively high academic degree in chemistry and (probably) who
also specializes in this type of testing. The information I supplied
comes merely from records found during a search for the answer of your
original question, though some of the links may describe these methods
in some detail.
