Dear lapatisserie-ga; Thank you for allowing me an opportunity to answer your interesting question. The method used to test for flours and breads for traces of potassium bromate is called inductively coupled plasma-mass spectrometry (CV of 12%), sometimes called closed-vessel microwave digestion with flow injectioninductively coupled plasmamass spectrometry. This method replaces two older, less accurate tests called Gas chromatography (CV of 18%) and Liquid Chromatography with Post-Column Flow Reactor Detection PVM 2:1999.
