What takes the burnt flavor from rice when you burn it?

Here's some useful advice about burned rice:

"To salvage scorched or burned rice, first scoop the rice into a clean
pot, but be careful not to scrape up any of the crusty, burnt bottom
layer. Place a single layer of onion skins on top of the rice. Cover
the pot and let it sit 10 to 15 minutes. The onion skins will remove
the burnt taste. Discard the onion skins and serve."

"Rescuing BURNT RICE -- To rescue rice that is a little burnt, first,
lay a slice of bread on top of the rice. Replace the lid and leave it
to stand for about 10 minutes or so. The bread should soak up most of
the burnt taste. Next, remove the rice carefully, leaving the burnt
rice on the bottom of the pot."
