How do you "malt" barley?  I have whole grain barley and need to malt
some for sourdough bread.

Thanks for the solid and complete research.  You went the extra mile
with the sourdough recipe, though I've never seen a recipe quite like
it.

It's a long process, and can go wrong if moulds attack the barley:

Go to www.grainscanada.gc.ca and ask someone at the Canadian Grain
Commission to answer your question. Or go to a company called Praire
Malt in Saskatchewan Canada and ask them.
