What is the difference between wheat intolerance/allergy and celiac
disease?  Are there classic symptoms of non-gluten wheat intolerance
as there are for celiac disease?

intolerance, and celiac (or coeliac) disease (also known as gluten
intolerance).  These pages indicate the differences between these
conditions, and between the symptoms for these conditions.  I think
