For an academic project, I'm looking for information on any prior
studies that quantify the damage done by employees fired by an
organization (the number of incidents, monetary value of the damage
done and the costs for recovering from the same).

Such damage might be unauthorized access of electronic data,
corruption of such data, incorporating bugs into the code before
leaving the organization etc.

Would also appreciate any reports that estimated such damages if
reports with actual quantified data are unavailable.
