I found a story about a 1900 mile "journey" (not a race but certainly
a test of endurance) from Montana to California of a notable group of
men by bicycle that was undertaken in the very late 1890's in order to
prove the usefulness of bicycles. Could this be what you are seeking a
book about?

Hello Larstein,

I am posting these lists of cycling books as a comment since I was not
able to locate a specific book about a 1900-1915 cross country bike
race from California to New York.

Pedaling History Bicycling Museum has over 200 bicycle books:

I hope this helps!
