As you are aware, the word caviar is reserved for the eggs of
sturgeon, an ocean fish that lives mainly in the Caspian Sea, which
borders Russia. There are actually four distinct types of caviar
available of which the Beluga caviar is the most priced: It has a
smooth, rich, buttery taste with a color range from light to dark gray
and is obtained from the Beluga (the largest of all the sturgeons)
I have been able to locate the following, licensed producers and
exporters of beluga caviar from Bulgaria.

I am extremely sorry for not having included the contact details of
the firms that I have included as part of my answer. Again, as with
the case of producers and exporters of caviar in Romania, details are
very difficult to find :( From the original list of 4, I could find
additional details in only one case.
