I want to get a bunch of stand-alone Voice over IP phones that simply
plugs into my LAN. I don't want it to require me to subscribe to a
pay service. I should be able to just punch in the IP address of
another one of these phones and it should connect.

I do not need any gateway to a regular telephone (PTSN), I have other
phones and cell phones for that.

Currently we are using Windows software to do this, but I'd like to
get away from it having to run on a PC. And if this works great, then
I can send my grandparents one of these phones (they are
computer-illiterate) and we can chat anytime (just set a speed dial on
their phone to me).

Speaker-phone capable would be a huge plus.

Video-phone not required, but a minor plus.

Analog connection (so you can connect other phones, fax machines into
a current call) a plus.

If these phones required a publicly accessable central server, I could
set one up. I suppose that could allow for portability of the phones
then... as the IPs could change for a phone if you were at home on a
DHCP network.

I see this question has expired, but maybe you will get this comment
anyway.

There are videoconference units made my Sony that do exactly what you
describe. As long as the units can reach each others IP address and
the proper ports they can just 'call' each other. These include video
and speaker phone capability.

Another possibility for voice only applications would be a small (or
large if you need it) IP capable phone system. I can recommend first
hand the NEC IPS, Nortel BCM and Inter-tel Eclipse as all very good IP
capable systems. On these systems you would dial each phones
extension number as opposed to an IP address (much easier for end
users in my opinion)

Now for the plug. My company sells, installs and maintains all the
above mentioned equipment. www.teamonesolutions.com

That Sony product sounds just like what I want. What is the model #?
Do you sell it? And how much are they each?
