Where can I find an up-to-date timeseries of confirmed atypical
pneumonia infections,hospital discharges and deaths in Hong Kong?

definitive source, but they don't have a timeseries.

http://www.sosick.org/ used to track numbers, but they stopped a while
ago.

same level of detail you require, but otherwise is quite good:
