Question ID: 208697
How much saleable meat is there on typical beef cattle?

Deliverable: Approximate total figure in Kg or lbs. This is a $2
question; no explanation, links, search criteria, or other
unprofitable use of your time is necessary.

Scoring: Include/ exclude offal as the data comes, but specify if the
figure is with or without and ditto cooked/ uncooked weight (for your
5th star). Any other plausible answer gets 4.

Tips: I plan to post follow-up quesions on pork and chicken, so if you
come across similar info for these in the course of your research,
I'll tip a dollar each, but you can still score full marks on beef
alone.

Thanks!

Greetings Spurious:

I located a chart at
http://attra.ncat.org/attra-pub/altmeat.html#producing that stated
"These are some very general guidelines to help estimate meat yields
from the Sustainable Farming Association's Locally Produced Meat Fact
Sheet Series...Weights are in pounds."
                                       Beef Pork Lamb
Live weight, whole animal 1000 250 95
Hanging weight (after slaughter) 682 175 40
Total meat yield after processing 550 165 33

This is uncooked.

As for chicken, I didn't locate that information but I certainly
tried. :) Please forgive that I did not follow your directives to
not post my search strategy and links but a GA Researcher is bound by
contract to show each customer how results are acheived and where the
information may be located for confirmation. Should you require any
clarification of the links or information I have provided, please
request it and I will be happy to respond.

Thank you for your rating, comments and added generosity! I see you
gave me $1 for including lamb and I didn't anticipate that - it was
just in the chart. Thanx!

You can find a very detailed chart of the % of each primal cut found
on a average beef at the link below:

It details the % and average weight of the primal cuts on an average
Angus Steer.
