Hello Deppforest-ga,
As you are probably aware, this information can be found in the
National Gardening Survey http://www.garden.org/RSRCH/report.asp ,
however it is possible to extract theses numbers from the 2001

I located a few more sources of information, although they are not as
authoritative as the 2001 Statistical Abstract of the U.S.
Since around 23 million Americans grow vegetables in their garden as
a form of relaxation, they form a quit significant and affluent niche
market.

It is estimated that more than 5 million Americans grow at least part
of their own food each year. At first this number seems impressive: 5
million of anything sounds like an awful lot. But it also means that
some 245 million Americans (around 98 percent) do not grow any food
for themselves or their families. Suddenly, the number of home
vegetable gardeners seemed pathetically small.

Nearly 30 million Americans who have gardens, about 95 percent of
them grow tomatoes in their backyards. This makes tomatoes the most
popular home-garden vegetable in the United States.

"An estimated 60 million Americans grow a portion of their own food in
a vegetable garden. Their planting needs are supplied by 255 mail
order seed companies, countless local outlets for seeds and plants,
and the ever-present grocery store seed rack.

Slowly but surely, the popularity of herbs has been increasing.
Actually in the last few years, interest in herb gardening is soaring!
The National Gardening Association hired the Gallup Organization* to
do a National Gardening Survey for 1991, published in 1992. Eight
million U.S. households (9%) participated in herb gardening. Herb
retail sales increased from $84 million in 1990 to $161 million in
1991, and increase of 92%

According to the national gardening survey (National Gardening
Association 1994), container and herb gardening has increased 10% and
15%, respectively, annually from 1989 to 1993.
