It depends on who's cache you're referring to, and whether or not the
page in question belongs to you.
If the page you're seeking a cache date for belongs to you, you can
easily determine who cached your page and when by examining your
server logs for the name of the spider in question - for instance, if
you want to know when the Googlebot came to visit, simply download
your logs, open them in Word, and search on "googlebot" (no quotes).
Your logs will show you when the Googlebot came to visit.

If you're trying to determine the cache date for a page you don't
maintain, you might have a bit more difficulty.
Some sites, such as Gigablast and the Internet Archive, do indicate
the date of caching. For example:

http://web.archive.org/web/*/://www.google.com
Google does not indicate when a page was indexed during a normal
crawl, but does indicate when a page was cached by the Freshbot (the
'bot responsible for crawling pages that are frequently updated) -
pages visited by the Freshbot will have a date before the cache link
in the Google search results. Pages not visited by "Minty" (as the
Freshbot is affectionately called) will not have a date on them - if
you do not own the page, you'll be unable to determine when it was
cached.
