Hi jtmandel,
It is important to identify where your Katydids are from and their
subfamily grouping. The diet of Katydids (Tettigonioidea) varies
according to their native habitat - many Katydids will accept flowers,
while others prefer grass and seed while others prefer fruit and dead
insects. Therefore, I would like to suggest getting in touch with the
OSF Orthoptera Species File. They are keen to help you determine the
best growing conditions according to your specific location and I'm
sure they will be happy to help you.
OSF:
"Very often we receive e-mail messages asking about keeping native
katydids or grasshoppers alive. Below you will find a brief
introduction to what you can feed them and how to keep them. If you
need more specific information please don't hesitate to contact us.
Remember to include information on where you live as it makes a big
difference if you live in Boston, USA or Harare, Zimbabwe - the faunas
of different parts of the world are very different."
"If you live in other parts of the world and would like to know what
to do with your live katydid, contact me and will help you to keep it
alive."

I haven't been able to find anything specific to breeding Katydids,
therefore I'll just post this as a comment. If you find I've answered
your question, please let me know and I'll post it as an answer.
Thank you,
