How do I know when to pick the limes? I bought a potted Persian lime
tree from Lowe's 5 months ago and there is 1 lime on it with 2-3 small
ones. If it was a lemon, I would know by the rind color.
Answer:
You want to pick them before they turn yellow, since the flavor
changes at that point. Prior to that, they taste like limes at all
sizes, but are not very juicy until nearly full size. Under Florida
Law, 1.75 inches diameter or 42% juice content by volume are the
minimum standards for harvesting limes. As a lime approaches full
size, the peel will become smoother and rather stretched-looking, and
will lighten somewhat in color.
