You can do this with the Shading control. Select the text you want to
get this treatment and open the Format menu. Then select Borders and
Shading... and click on the Shading tab. Select Black from the color
palette under Fill and click OK.
This will give you a black background. If the text color is set to
Auto (which is the default), you will get white text automatically.
You could explicitly set the text to white, but then you won't be able
to see it against a white background. You can control the text color
in the Font dialog. To get there, open the Format menu, select
Font... and select from the Color drop-down list on the Font tab.
Besides setting selected text this way, you can also set the text and
fill colors for a style if you want.
The instructions above should work in at least Word 97 and Word 2000.

Search Strategy
I looked in the help for Word 97 for "color." After following some
dead ends about setting the background for a web page, which wouldn't
print, I searched for "background color." (This was on the Find tab
of the help.) The first four results were about the web page
background, and the fifth, "Add or change shading or a fill," led me
to the controls described above.
