Howdy sobelle!
The Xbox website has a nice tutorial on how to get the most
from its audio capabilities.
http://www.xbox.com/support/hardware/Dolby.htm
Their first step shows that you will need to get digital
audio output from your Xbox, but this is not standard on
the Xbox. They suggest you get a Microsoft Xbox "Advanced
AV Pack" or "High Definition AV Pack."
Since your television does not have high definition, it
appears the "Advanced AV Pack," which retails for $19.95,
will handle the job for you.
http://www.xbox.com/system/advanced+av+pack.htm
"The Xbox Advanced AV Pack allows integration between the
Xbox video game system and televisions or receivers that
utilize optical digital audio input for Dolby Digital
playback, as well as S-Video input."
There are third party (Monster, etc.) that make similar AV
cables, and your local electronics store (Best Buy, etc.)
should carry a selection.
The specifications for your Boston/Kenwood Unity DVD/Receiver
Home Theater System shows that it has the needed connections.

"Digital Audio Input: 2, with ... 2 Optical Connections"
...
"Video Inputs: ... 3 S-Video"
You will want to get an S-Video cable as well as a optical
digital audio cable when you get your Xbox AV cable.
You will then hook up the AV cable to the back of the Xbox
(the connection there will be obvious, marked, etc.) and
then connect the S-Video cable between the Xbox AV cable
to one of the S-Video inputs on your Unity system.
The Xbox page referenced above has the audio set up steps.
"-Connect the digital audio output to your Xbox.
- Connect one end of the optical digital audio cable to the
digital audio output on your Xbox and the other end to the
optical digital input on your receiver.
- Turn on your Xbox with no disc in the disc drive.
- In the Xbox Dashboard, select Settings.
- Select Audio.
- You will see an Audio Mode screen that shows Dolby Digital
and DTS status. Select Dolby Digital.
- You will see the question "Does your stereo system support
Dolby Digital Audio?" Select Yes.
- You will see Dolby Digital Enabled in the audio screen."
Your S-Video connection between the Unity system and your
Panasonic television is the way to go.
Once you make all the connections and Xbox settings change,
switch your Unity system on, set it to Xbox video input
you are connected to, turn your TV and Xbox on, and you should
be set.
As for the make of cables to use, the only thing that people
seem to agree on is that shorter is better. The "ear of the
beholder" is the determining factor, in other words, what
sounds best to you.
If the "low end" Monster cables at $30.00 or so are in your
price range, go for them. At short lengths with relatively
low power, you could probably go with less expensive ($20
or so) cables and not notice a difference.
If you need any clarification, feel free to ask.
