I would like to find a machine that will enable me to jar my homeade
pasta sauces.  I am not interested in home canning or preserving
strategies.  I am looking for a commercial grade machine that will
allow me to jar my sauce in small batches of perhaps 50 -100 jars at a
time.

basically what I am looking for is a small coomercial unit that will
allow me to jar my pasta sauce in small batches.  I have searched the
internet and most equipment for jarring sauce have minimum capacities
of approximately 2000 - 3000 jars per hour.  This type of equipment is
much too big for me.  I am looking for a smaller scale machine that is
commercial grade,

Hi Al45,
After lengthy research, I have found a machine which i think is
suitable. It can fill about 700 bottles per hour, and occupies a space
of about 2sq meters - optional extras (such as conveyor, collecting
table etc) are also available.

Hi Jack,

It might be a little too big for initial production.  However if it
will allow for minimum production in the beginining, say 200 -300 jars
it might do.  Also what is the cost?  Does it vacuum seal and add
labels?

HI again Al,
Apologies for the delay in replying.
I have been in contact with the company and they inform me that it is
not possible to vacuum seal with their machines, but it is possible to
label the jars with their labelling machine.
In order to determine the best solution and to give you a better idea
of the filling capacity rate and the cost, could you please let me
know
* the size & shape of your jars
* information about your pasta sauce(s) 
* information about your labels
* your location
