I've been working on your question now since yesterday, and I'd like
to let you know where we're at.
I've contacted several associations, organizations, and the like,
along with doing significant searching on my own. If you were
looking for estimates, I would say it would be possible to get this
information on the net through a lot of digging. The data would be
imprecise and unverified. However, since it looks like you're seeking
a precise breakdown, it's going to have to be from a fee-based
service, since this information costs research firms money to produce.
I've located a source that has the total number of hotels and motels
in Colorado along with a percentage of those having food and beverage
facilities. Negotiating with the firm, they have agreed to $100 for
this information.
As for RV Parks, I have only been able to find a free directory online
that has "meals served" and "restaurant" criteria. It does not
include "state-run" parks, and the list may be incomplete. No RV park
association I've talked to has heard of such information.
I would be willing to work with you in terms of re-adjusting your fee
for this question, since it would cost additional money to acquire the
hotel/motel information, and the RV information is not really
available in a "statistically precise" format as far as I can tell.

Performing two separate searches, each with "Meals Served" and
"Restaurant" respectively, the following data was arrived at:
Of 177 parks listed, 40 (22.59%) are denoted as "serving meals." All
but one are denoted as having either a restaurant on the premises or
one near by.
Search strategy:
Used several search terms along the lines of:

Contacted various organizations such as:

Hi Jordan,
Thank you for the info on the research firm, we'll follow that up
immediately. The only thing with the RV Park answer that's not really
satisfying is that we ourselves are listed with Colorado Directory, a
listing that cost me $1K for a year. The parks listed there are select
in that everyone of them pays nearly what I did to be listed, alot of
RV Parks in Colorado do not participate in their listings, obviously
because of cost factor. I know there are more than 177 RV Parks in
Colorado. Could we perhaps expand on that search?

I checked with numerous sources on that. It would be relatively easy
to find a list of the total number of RV parks in Colorado. What's
extremely difficult to find is which ones have eating facilities. I
will give another go at it. If I can't find an answer, I can remove
my current answer to this question, and you can lower the list price
again.

I did some more extensive searching, and I've been able to uncover one
piece of a data that might be able to give you an estimated snapshot.
The National Association of RV Parks does a National Operations and
Economics survey. Included in this survey are findings on the
percentage of parks nationwide that have food service. This number is
20%. According to the organization, there are about 8,500 commercial,
non-government-owned parks nationwide.
Unfortunately, I don't see any percentage data specific to Colorado.
However, if you apply this general percentage to the number of
non-government owned parks in Colorado, you might be able to get a a
ballpark picture of the situation.
According to the Colorado Campground and Loding Owners Association,
there are close to 275 non-government RV parks in Colorado. Applying
the national average to this number will give you about 55 parks.

Sorry for the delay in response. We've had power outage problems on
this end.
The answer was not all I hoped for, not your fault of course, but if
it's all that is available, than it will have to do. We contacted

Yes, I spent quite a bit of time on this. I really don't think data
specific to Colorado is out there. National data seems to be as close
as it gets. As one RV association representative said to me, it's the
first time anyone has asked her such a thing. :)
