how to apply baking additives like guar gum, soya lechithin, calcium
lactate, calcium carbonate,citric acid in making sponge and
buttercakes, and in what ratio.

i was not able to get the to the point answer to my question.Please
clarify
the ratio of these additives in fatless sponge cake and eggless sponge
cake.The details and information about the additives was ecellent.But
what I want to learn is how to make acake with them that will turn out
just like a bakrry cake.
I want to start asmall bakery as well as readymade cake mixes for the
indian market.
Thanks.I shall be highly obliged if you could help me by answering
this.
