What happens in a Shariah trial ? I need a "blow by blow" account -
the Qadi arrives, everyone stands, he recites the Quran etc.
Also - can you find a picture/ photo of a Qadi from an Arab country ?
(ie not Malaysia for example)

I don't know that there are established procedures or even proper
etiquette for "each and every" Shariah court, inasmuch as the western
world has established a criminal procedures, protocols and guideline
for our courts based laregly on old British rules of parlimentarinism.

I think however one conducts himself at his trial to keep from getting
himself stoned to death is probably a good strategy and acceptable
behavior.

While this doesn't give you the detail by detail account of a trial
you are looking for, it is a good overview of the Shariah based court
system of Saudi Arabia.  It covers the legal protocols from arrest
through conviction or acquital and explains the processes in between. 
You will also learn about the types of courts, the judiciary, and a
few sample cases.  There is quite a bit of room for improvement and
this website details just what improvements are needed.
