Me and my wife are planning to take a year or two off staring 2006. We
would like to dedicate that time to studying Spanish in a Spanish
speaking country (I am fluent in casual Spanish, she is a beginner).

We first though of moving to Madrid, Spain, but there are number of
more interesting countries in south and central america and possibly
elsewhere.

The purpose is to study in a relatively good school for 3 hours a day,
enjoy life and practice Spanish rest of the day.

Here are our parameters
- Warm weather and nearby coast is nice
- The price level of the country/school should be reasonable: living
costs up to $1000/month (at least 2 bed room house). School up to $500
per month (total for both of us)
- Possibly near a major city so that there are services
- My likes tropical fruit, gardening and cooking. I like jogging,
squash, online investing and reading. It is a plus for the place if
these activities are possible.

As an answer, I am looking for recommendations for pleasants countries
and good schools to learn Spanish in that country.

While it’s difficult for any one person to say with guaranteed
certainty what the “best” place to do anything is for someone else,
here I will present you with the details of several excellent places
to study Spanish meeting your criteria.

I have traveled extensively throughout the country of Mexico, and
speak some Spanish myself. Because of my familiarity with this
country, I’m going to recommend some “immersion” style Spanish
language schools in Mexico that meet the criteria you have outlined in
your Question. That way, you’ll be able to contact several and make a
well-researched decision.

Not every one of them will appear at first glance to meet your exact
pricing requirements, but I think you’ll find that if you’re willing
to spend $1,000 USD per month for both of you on tuition, plus living
expenses (which in Mexico generally are quite modest), I doubt you’ll
have any trouble reaching an agreement with the managers of these
schools, even if it’s not the precise price listed on their website.
Most are used to dealing in terms of weeks or months, so you would
undoubtedly receive excellent rates if you tell them you want to study
there for a year.

My recommendation, based on personal experience: Quetzaltenango,
Guatemala. I don't know if you can play squash there, and the coast is
a few hours away, but the costs are low and all your other
requirements are met.  There are a number of good schools; I'd suggest
going there, then pick a school after you arrive (or better yet, go to
several).
