Where can I find information on companies interested in sponsoring a
non-European citizen (i.e. Me - Australian) to work/live in Europe.

Would prefer Germany or Belgium, can speak some German, but would be
willing to work anywhere including Non-EU countries. I'm happy to pay
relocation costs and for any language courses required if that helps

I am happy try anything where the employer is willing to sponsor me. I
would like to stay 1-2 years minimum, preferably indefinately.

I have the following qualifications:
- Aircraft Mechanic on commercial airliners (Boeing aircraft)
- Advanced Certificate in Mechanical Engineering (2-year Part Time)
- Level 3 Certificate in Information Technology (3-years Part Time)
- Have completed Microsoft Approved training courses to a 'Developer'
level in Microsoft Access & Microsoft Visual Basic 5/6
- Advanced PC skills including Office/Internet/Email applications &
'Client/Server'-based Mainframe applications

My current job is in Aircraft Maintenance Scheduling/Coordinating &
Operations Control for a commercial airline with 7-years experience,
however these skills could be utilised in any transport, maintenance
or manufacturing industry.

This is by no means an answer, but at leats two countries in Europe -
Germany and UK, have a programme for professionals who would like to
work there:

Highly Skilled Migrant Programme (HSMP)

The German "Green Card" scheme refers mainly to IT experts:
