Hello torps-ga,

There are a few ways that you can go about finding Greek recipes for
courgettes -- which is what I assume you meant by "corquettes" -- and
for eggplant.  (If you meant "croquettes", I have included a search
for that towards the bottom of the answer.)

One method is to start with the category of Greek cuisine on Google:

"Home > Cooking > World Cuisines > European > Greek"
Google Directory
http://directory.google.com/Top/Home/Cooking/World_Cuisines/European/Greek/?tc=1

Then you can browse the listed web sites to find recipes.  (Keep in
mind when searching that "courgette" is also known as "zucchini", and
that "eggplant" is usually listed as one word and are also known as
"aubergines".)

For example, you can get some Greek recipes from a search for
"eggplant", "aubergine", or "zucchini" on this site:

"Greek Recipes" [click on "Search just this area" before searching]

There are also several eggplant and zucchini recipes here:

"Vegetables"
Recipes of Greece

In addition to browsing these sites, you can formulate various
searches on Google.  Searches for the words "greek" and "recipes" [or
"recipe"] -- either as a phrase or individual words -- and various
combinations of the vegetable names will produce some useful results. 
For example:

'Searched the web for zucchini eggplant "greek recipes"'

'Searched the web for courgette greek recipe' [Note: Searching for
"courgettes" instead of "courgette" would also work.]

You can also take some of the recipe names that you find and use them
in your searches.  For instance:

'Searched the web for "melitzanokeftethes kroketes"' [Note: This is
Greek for "eggplant croquettes", which you might search for instead,
in combination with the "greek".]
