What is the the large round Chinese grill called that is used in
Chinese restaurant for stir-fry?

The large round grill you are referring to is commonly called a
“Mongolian grill”. Often this type of grill is used in an audience
participation type venue or as a means of providing patron
entertainment. Chef’s who work on these grills are commonly trained to
perform amazingly agile and difficult cutlery maneuvers that you
simply have to see to believe. The public preparation of the food to
be consumed in one of these types of restaurants is nothing short of a
fantastic floorshow.
