What was the name of a major hurricane that hit Galveston, Texas in
the late summer/fall hurricane season of 1972?

No hurricanes hit Galveston, Texas in 1972.  Here are the tracks of
the three hurricanes in the Gulf of Mexico and Atlantic in 1972:

In 1971, two hurricanes hit near Galveston: Fern and Edith.

1973, like 1972, had no hurricanes in the area of Galveston.

I assume, therefore, that you are thinking of the hurricanes from
1971.  The following list of 1970s hurricanes in the Galveston area
suggests that the major hurricane you are recalling is Fern in 1971,
or possibly tropical storm Delia in 1973:
