I have completed my research and need a clarification before I post my
answer...

There are 3 possibilities depending on your answer. In my research, I
did assume that by "Saloon", you meant an establishment that is
licensed to serve beer, wine and/or hard liquor, and that is it's
primary function. Serving food is not the issue. Therefore I utilized
the temrs 'Tavern' and 'Bar' in my search as well.

All 3 possibilities have had continuous, ongoing liquor licenses since
they opened.

1) 1878 - was closed for a time in 1998 for extensive remodeling.
2) 1879 - continuous and ongoing since opening.
3) 1834 - Although the name of this establishment has the word
"Tavern" in it, it does not claim to be the oldest ongoing
saloon/bar/tavern, rather it claims to be the oldest ongoing
restaurant west of the Mississippi. It is primarily a restaurant and
has limited bar hours, but it does fit your criteria. Sort of.

Based on the findings above, which location fits your criteria best?
If you are as undecided as I am, would you like me to post them all in
the answer box so you can decide for yourself?

The one with the 1879 date has a couple different dates at different
Web Sites. It's past 'closing time' there right now so I can't call,
but I'll check for a reply from you in the morning and, depending on
your answer, I may call them to get the exact date.

northeast corner of Grand Avenue and St Joseph Avenue, first opened in
1878. The bridge in the background once spanned Chicago Northwestern

Originally, the upstairs was a hotel. For decades, it doubled as a
brothel. In the 1950's, bricks from the top 2 floors were used to
reconstruct the Pony Express Stables. Over the years, the building
became very dilapidated and was in danger of being torn down. In 1998,
the new owner totally remodeled the old structure and appears to be
doing a prosperous business..."
