No luck on the James Beard article. but I have located an article
published in 1876 on "Spanish Stews" that offers a very nice (and
suprisingly modern sounding) description of Spanish cooking, including
garlic soup. This is not a recipe, per se, so much as an article on
the people who cook, the things they eat, and the context of the
dishes.
For example:
"Another dish, also common to the very poor, is sopa de ajo, or garlic
soup. This is made of garlic, shredded hard crusts of bread, oil,
salt, and water; and, as garlic and oil are cheap as dirt, and the
bread is bought three days old, it costs hardly anything. There is a
proverb..."
...and on the article goes.
As I said, no luck on Beard. But if the 19th century newspaper
article is of interest as an answer to your question, let me know, and
I'll post the details.
