I need an industrial/commercial scale recipe for fresh fruit smoothie
manufacture including if possible process flow, equipment and HACCP
planning. Ideally the process should include a heat/pressure treatment
step.

Does your question relate ro a real situation or is it a study/training case?

For the price you have set, I could give you an answer that will serve
as an suggested outline of a manufacturing plan.  If you need a
detailed description that contains all the information needed to
actually perform commercial scale manufacture, I believe that you
should increase your question's list price quite a bit.  Such a plan
would probably take several hours (or even days) to create, and would
typically cost several hundred dollars if it was made by a
professional.

This is a case study for a course and I really want an outline and
some links to pursue my research at this point. The purpose is to have
a basis for a team exercise in HACCP analysis and planning.

As I proceed through the project I may have further specific questions
to clarify and would came back at that point with specifics.
