I know there is a daily recommended allowance of nutrients that my
body needs and that a healthy balance of foods is essential, but I am
curious if there is any sort of test, device, or method that can tell
me which nutrients my body is lacking at any given time. That way, I
know which specific foods to eat each day to provide those nutrients
that I am lacking.

You can consider taking a vitamin/mineral supplement, so that your
diet is "complete".

I think you should consult your doctor before taking anything, however.

Centrum is available at most pharmacies, and does not require a prescription.

The link provided by jackburton is interesting.  I wonder if the
device is used in USA also.  For what it's worth, my doctor had me
take a blood test for minerals.  The results listed each mineral level
in my blood.  Then the doctor custom designed a supplement mixture for
me that increased the low numbers and reduced the high ones.  It
worked well.  On the next blood test, things were much better in
balance.  It didn't deal with vitamines.

Be cautious of labs that claim to be able to provide valuable medical
information by analyzing hair samples. There's a lot of quackery out
there.
