<Alternatives to cereals.
Alternative flours are buckwheat, tapioca starch flour and potato
starch flour. Buckwheat is a grain commonly used in the Far East. It
is not a cereal but is a herb. It is made into buckwheat flour which
can be used for a variety of baking products including bread.

taste to breads. It works well in white bread and French bread. Potato
starch flour is good as a thickening agent.
You should be able to buy these flours in a health food shop. I have
also listed some online sources.

Advice for using gluten free flour.
Gluten is the substance that makes stops bread from being crumbly and
falling apart.
Xantham gum is an alternative to gluten. One teaspoon is needed for
each cup of flour.
Often more yeast will be needed to get the bread to rise. Other
alternatives to gluten are Guar Gum and Pre-gel Starch.
