I am searching for a recipe for a pastry cream called holland cream
.One is hard to find,can you find one? It is used as a filling for
long johns.Thanks

Hi kimba40,

I have been unable so far to find an exact recipe for Holland cream. I
have found various other recipes, as well as another person searching
for Holland Creme:
A woman named Joan posted a similar question on Bakery-Net, saying ?I
am looking for a recipe for Holland cream. I used to fill long johns
with it years ago in a bakery but all the small bakeries are gone now
and the grocery store bakeries don't use it. I would like to
reintroduce it to the public. I believe it's the same filling that is
used in Kreme Kurls or Creme Horns.? Sadly, there is no response on
the site.

Holland Crème Filling is mentioned on this site (Page 5) as a filling
for Wagon Wheels, and Page 6, for Palm Leaf Rolls. In this context,
the crème seems more of an icing consistency, rather than a filling.

Could this recipe possibly contain a liqueur? Does it contain sour cream?
I've found some that sound like they may be the right recipe,
including some Horn filling recipes, but since I'm not familiar with
this name, I am not sure. Any other hints?

no sour cream or liquer.It is a very,very light and airy filling

actually,a horn filling would be fine if it`s called holland cream

I couldn't find a recipe, but I found a company selling it.  Perhaps
you could purchase some and check the ingredients list for a rough
idea of content?
