I love to bake but I was not familiar with the Danish Wedding Cake and
I had a great time tracking it down for you. It?s original name is
Kransekage and I?ve located several recipes for you. There are many
variations on how to make it so you can pick whatever suits your
skills and tastes. What?s even more amazing is the whimsical forms

Denmark: The traditional Danish wedding cake is the cornucopia cake
(Danish marzipan ring cake) that is made of almond cake, pastilage,
and marzipan and beautifully decorated with sugarwork. It is filled
with lots of life's "goodies" such as candies, almond cakes, fresh
fruit and sorbet. The cake sometimes is decorated with marzipan
medallions bearing portraits of the bride and groom. Brides and grooms
traditionally "cross dress" to confuse evil spirits.

Kransekage

Kransekage is used throughout the Scandinavian countries by those who
wish to preserve tradition and is often decorated with flags and is
almost always seen at weddings of royalty.

Tradition stipulates that a special bottle of wine be hidden in the
center of the cake; and that when it is time to serve the cake, the
top tiers are lifted off the very bottom one, leaving the wine exposed
and ready to serve. the bottom ring is broken into pieces and served,
then the next largest one is uncovered, broken and served, and so on
until all guests are served. If the Kransekage is not used over a wine
bottle, it is common to serve it from the small top ring and down. The
cake is of macaroon consistency and broken pieces are eaten as a
cookie.

Norwegian Almond Ring Cake (kransekake) 

This cake is made of almond macaroon rings ranging from about 10
inches in diameter to about 2 inches, stacked in order from the
largest on the bottom to the smallest on the top, making an unusual
pyramid of cookies. This is the Norwegian Wedding cake, birthday cake,
anniversary cake, or baptism cake.

A few more variations on Scandinavian Kransekage 

TRADITIONAL ALMOND WREATH CAKE:
Kransekage, Kransekake, Kransekaka

The dough can be made with  blanched or unblanched almonds, or with a
mixture of the two.  With unblanched almonds, the cake has a golden
brown hue and is chewy. The easiest way to make a kransekake is to use
the special ring molds that are sold in Scandinavian cookware catalogs
or specialty shops.  Or, you can use the original, trickier method of
cutting the strands of dough into the different lengths and turning
them into circles, all by hand.

Just a tip: The cake is much better if almonds are used instead of
marzipan. Kransekake is yummy!
