I'm looking for all the quality information I can find about brick
ovens in restaurants -- primarily what needs to be done to get them to
comply to fire codes, how to satisfy health departments that brick is
cleanable, even a list of a few restaurants (particularly in Virginia)
that have them.  Thank you.
