I believe James Fenimore Cooper wrote 32 novels. How many of these
novels take place during the French and Indian War [1754-1760], and
how many during the War of 1812? Any during the Revolutionary War?
Or any other wars?

pdq2 --

The following James Fenimore Cooper novels were set during the years
encompassing the wars you noted in your question. I have listed first,
and asterisked, those novels whose plot summaries make clear that
their primary specific settings were the wars themselves. Following
that list I have noted two Cooper novels whose plots were set in the
context of other wars.

French and Indian War (1755-1760)

* "The Last of the Mohicans: A Narrative of 1757"
* "The Pathfinder; or, The Inland Sea" (set in 1759)
"The Red Rover" (set in 1759)
"Satanstoe; or, The Littlepage Manuscripts: A Tale of the Colony" (set in 1758)

I should also mention "The Deerslayer; or The First War Path."
Although it takes place in 1740 (before the French and Indian War), it
features Natty Bumppo, who is the hero of "The Last of the Mohicans"
and "The Pathfinder," Cooper's famous novels that were set during that
war.

American Revolution (1775-1783):

* "The Spy: A Tale of the Neutral Ground" (set in 1778)
* "Lionel Lincoln; or, The Leaguer of Boston" (set in 1775)
"The Pilot: A Tale of the Sea" (set in 1780)
"Wyandotte; or, The Hutted Knoll" (set in 1763-76)

War of 1812 (1812-1814):
* "The Oak Openings; or, The Bee-Hunter" (set in 1812)
"Precaution: A Novel" (set in 1813-14)

James Fenimore Cooper novels set in other wars:

Mexican War:
* "Jack Tier; or, The Florida Reef" (set in 1846)

Napoleonic Wars:
* "The Wing-and-Wing; or, Le Feu-Follet" (set in 1799)

The source for this information was a extremely comprehensive Web site
that has been created and maintained by the James Fenimore Cooper
Society. Here is a link to the page on that site that comprises "A
Checklist of Cooper's Works":
The James Fenimore Cooper Society: A Checklist of Cooper's Works
http://external.oneonta.edu/cooper/bibliography/works.html

After gleaning the responsive information from the checklist, I went
to another page on the site that contains complete plot summaries for
each of Cooper's novels. I used that page to double-check my
conclusions about which novels were merely set during the periods of
the wars in question and which were actually set within the war zones.
Here is a link to that page, which might prove particularly useful
to you for further exploration:

And here is a link to that site's homepage, from which you can easily

Search Strategy:

I went in with a hunch (and a hope) that a single authoritative,
comprehensive source existed for the information you are seeking. My
hunch panned out, when the following simple Google search led to the
site linked above:
"james fenimore cooper"

In exploring that site, I found the link to Cooper's bibliography,
which contains a further link to the "checklist" cited above that
contains the date of publication of each of Cooper's books (fiction
and non-fiction), along with publication dates, years in which his
novels were set, and brief content descriptions.

Next, I confirmed the start and end dates of each of the wars you
mentioned by using simple Google searches with the names of those wars
as the search terms.

I then carefully reviewed the "checklist" of books for the novels that
were set in wars and in wartime and came up with the list I provided
above.

I am confident that this is exactly the information you are seeking,
and I was happy to be able the information to you promptly. If
anything is unclear, please ask for clarification before rating this
answer.
