some interesting information about cinnamon's beneficial effect on
blood sugar for diabetics.

Now how about some recipes to help you get that 1/2 tsp. of cinnamon a
day down without a lot of extra sugar?  Specifically, what sort of
"regular" food--i.e., food that belongs on a good, healthy diet (as
opposed to desserts and extras)--calls for or can stand the addition
of that much cinnamon?

And is there any known deleterious effect to the intake of cinnamon in
those quantities?

Hi apertyx,

Thank you for another most interesting question!  :)  I've found many
recipes for you and have not included dessert recipes in my answer.

Tropical Cinnamon Spice Shrimp

2 teaspoons brown sugar
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cayenne
1 pound peeled and deveined shrimp
1 tablespoon olive oil
Romaine leaves 

Combine sugar and spices in a glass bowl. Toss shrimp with the oil and
thread onto skewers. Sprinkle with spice mixture. Grill over medium
heat for about 2 minutes on each side. Serve on a bed of Romaine
lettuce.

Cinnamon Lamb Saute

Ingredients: 

1/4 cup olive oil 
4 large lamb shoulder chops (about 2 pounds), boned and cut into bite-sized pieces 
salt and freshly ground pepper to taste 
3 medium yellow onions, coarsely chopped 
4 cloves garlic, minced 
1 1/2 to 2 teaspoons ground cinnamon 
28-oz can tomatoes, coarsely chopped and drained of most of the juice 

Directions:

1. Heat a large skillet over medium-high heat for 1 minute. Add oil,
heat for 1 minute.

2. Season lamb with salt and pepper. Brown lamb on all sides in
skillet, about 7 minutes. Transfer meat to a plate and set aside.

3. Add onions to the pan and cook over medium-high heat until
translucent, about 7 minutes. Add garlic and cinnamon and cook for 1
minute, stirring occasionally.

4. Add tomatoes and a little of the tomato juice to the skillet,
stirring to prevent browning, and cook for 5 minutes.

5. Return lamb to the pan, cook for 10 minutes over low heat,
uncovered, and stir. Serve over rice or couscous.

Cinnamon Apple Pork Tenderloin

Ingredients
1 lb  Pork tenderloin  
2 tb  Cornstarch  
1 ts  Ground cinnamon  
2 Apples;peeled,cored,sliced  
2 tb  Raisins  

Instructions:

1. Preheat the oven to 400 F. Place the pork tenderloin in a roasting
pan or casserole dish with a lid.
  
2. Combine the remaining ingredients in a bowl and stir. Spoon the
apple mixture around the pork tenderloin. Cover and bake 40 minutes.
  
3. Remove the lid and spoon the apple mixture over the tenderloin.
Return to the oven and bake 15-20 minutes longer until tenderloin is
browned and cooked through.

Cinnamon Honey Wings

2 1/2 Lbs. chicken wings
4 cloves garlic - chopped
1/4 cup olive oil
1/4 cup rice vinegar
1/4 cup honey
2 Tbls. soy sauce
1 1/2 tsp. ground cinnamon
1 tsp. thyme
1/2 tsp. ground ginger
1/2 tsp. dry mustard
    
- Combine all ingredients in a plastic zipper bag and refrigerate for
2 hours, kneading every 30 minutes.
- Remove wings from bag and place on a hot grill.
- Cook wings for 10 minutes on one side, then turn and baste with the marinade.
- Continue cooking 10 minutes.

(1) VISITOR COMMENT:

Great recipe! I baked them at 375' for 30 minutes and sort of drizzled
the marinade over them before baking, and it worked really well.

Bread Pudding

4 eggs 
2 c. milk 
1/3 c. sugar 
1/2 t. ground cinnamon 
1/2 t. vanilla extract 
1/4 t. salt 
2 1/2 c. dry bread cubes (about 3 1/2 slices) 
1/3 c. raisins 
Beat together eggs, milk, sugar, cinnamon, vanilla, and salt. Place
bread cubes in 8-inch (1 1/2 qt.) round baking dish. Sprinkle raisins
over bread. Pour egg mixture over all. Bake in a 325° oven for 40 to
45 minutes or until a knife inserted near the center comes out clean.
Cool slightly.

Yield: 6 servings

Again, my mother and I have tinkered with the original recipe
slightly; these days, we use dried cherries instead of raisins, and
I'm sure the dried fruit of your preference would work just as well.
Also, when I talked to Mom after I made this, she said that letting
the dish chill overnight (as I did with the casserole) might be a good
idea, to let the bread really soak up the egg mixture.

1/4 cup golden raisins

1 cup (4 ounces) shredded cheddar cheese 

Heat oil in medium saucepan over medium-high heat. Add beef, onion and
bell pepper. Cook, stirring occasionally, until beef is browned.
Add pasta, water, tomato sauce, garlic, salt, cinnamon and red pepper
flakes. Cook, stirring occasionally, for 14 to 16 minutes or until
pasta is tender.
Stir in evaporated milk, raisins and capers. Bring to a boil; remove
from heat. Stir in cheese.
 
Makes 6 servings.

Greetings Apteryx:

Consider buying empty gelatin capsules and filling them with the
cinnamon.  Then swallow the capsules with water like any other
pill-form nutrient.  The cinnamon will get into your system without
you having to taste it without sugar. The empty capsules are quite
inexpensive.

Thanks, journalist, I never knew you could buy capsules like that! 
Sometimes taking a spoonful of sugar to make the medicine go down is
not a very good solution.

Still interested in recipes, though.  Does any particular cuisine make
heavy use of cinnamon?

Don't forget cinnamon toast. It's a traditional Australian snack,
where it's made with lashings of butter and sugar, but it still tastes
OK without the sugar.

If you have a breadmaker you can bake the cinnamon into the bread.
