What details can be seen by a 3rd party that has some remotely hosted
javascript that shows adverts on my webpage:

When the ads are shown? And, when they are clicked on and the user is
directed to one fo their clients?

I  know that they can obviously get IP, browser, operating system etc,
but I would like a definitive list of ALL variable that they can
collect from my visitors, both by showing the adverts and when they
are clicked on.

Apart from the obvious information that you are already aware of:

...there is only cookies, and cookies can contain an unlimited variety
of information, but it needs to be supplied by the user, either
deliberately or inadvertantly.

Were you expecting anything else? My estimate is that the list of
other things would be empty. Do you have any reason to expect there is
other information that can be collected?

I just need to know all that can be discovered about a visitor to the
page, this page:

http://www.cyscape.com/showbrow.asp?all=1&bhcp=1

seems to list additional things to the link you've provided, so I
wanted to find a definitive listing, is there an official place like
at w3.org that shows all the information a browser gives without
volunteering further info?

I am trying to establish what this third party CAN know about my visitors.

they can easily see the nationality, web browser, ip, all the click of
this usern on the webpage and so on ...

There is currently no definitive list such as you suggest.

The link you have already provided gives a good summary of what can be
known. Note that the majority of the entries on that page can only be
known if Javascript is turned on. Normally the browser supplies only a
smaller amount of information: the URL requested (of course), the HTTP
version, the referring URL, the browser name and version number, the
operating system, the file types and methods of data transfer that the
browser supports and prefers, and cookies if you are accepting them
and the server has set them. Javascript can be used to query other
parameters; the list provided at the link you specified is quite
thorough and I refer you to it.

In addition, there exist high-quality commercial databases of IP
addresses by geographical location which can be used to pinpoint most
users within a particular metropolitan area or somewhat more
precisely.
