I have identified three ways to do this: Use a commercial indoor wood
pellet grill, a commercial gas oven and wood for flavor, or a
commercial indoor electric smoker. All will impart the wood-smoke
flavor of charcoal to some degree.
Commercial Indoor BBQ Grills
Traeger Wood Pellet Grill ? Traeger grills use wood pellets to impart
wood-smoke flavor to food as it cooks. They have two indoor
commercial models, designed to install underneath a standard hood:

Indoor Gas Oven With Added Wood
Another option is to use wood to impart flavor to your meat using an
indoor gas oven, such as those manufactured by Ole Hickory Pits.

Some apparently consider this to be a great sacrilege. Here is a

Commercial Electric Smokers
Another option is a commercial electric smoker, designed for indoor
use with outside ventilation for smoke. Take a look at these,
